How do I make it so that super moderators (or a certain usergroup with SM type abilities) not be able to ban users or lift bans?

Super moderators have all moderator permissions by default. There is no way to remove certain mod permissions for super moderators. To do that you would have to make them regular moderators:

Admin CP -> Forums & Moderators -> Forum Manager -> Add Moderator (in the menus on the right)

Ok then, is it possible to make it so that group can edit certain forums? Eg make subforums and change the subtext without having an admin account?

Only admins can edit forums. That is done through the Admin CP.
