I've had a couple users complain that they did not receive their registration email. Is there a log I can check to verify that it was sent out successfully? Also, where can I check to see what the sender address of those emails is? I might need to create an account to receive non-delivery receipt emails for those. Thanks in advance!

No, vB does not log emails. You can install this plugin which will log all vB emails to a file. This will tell you if vB is sending these emails or not:
