The newest user should update every time a user registers. The other stats are supposed to update nightly.

It sounds as if your site isn't getting the traffic needed to run all of the scheduled tasks on schedule. I recommend using the vbcron.php located in the do_not_upload folder. Instructions on use are in the file.
