Will it be safe and will it change anything if we edit the Language Code to "aus" for our Australian site and also change the title from "English (US) to "English (AUS)" ?

You'll want to create a new Language and name it English (AUS). It will inherit all the phrases from the default master language (hidden in the interface). This will prevent your changes from being potentially overwritten when you upgrade.Translations provided by Google.
