Users can control their subscriptions by pressing the "Subscribe" / "Unsubscribe" button on the top of each topic or channel. This will end emails for that content. They can turn off emails globally by visiting their Settings Page and changing the options on the Notifications tab.

For moderators and administrators, you can disable the automatic email on every post in the AdminCP under Channel Management -> Moderator Permissions. Edit each moderator and uncheck the email checkboxes.
