Now that everything is stored in the "node" table, are the post and thread tables still needed? Is there a post-migration clean-up script to run? Or is there a list of tables we can drop from the db?

I would not make any changes to the database at this time - not as long as vB5 is still in beta. Most likely, once vb5 goes gold a clean up script will exist. But now, while in beta, it would be a rather stupid thing to do to clean out stuff and then realize whoopsie, we really would have needed that...
Plus: there will be tables that vB5 gold will not use, but that will remain for the use of future features (like CMS). -
