Color theme & other UI settings updated; now how do I rollout this minor iOS update?

I've made some minor adjustments to my mobile app, consisting of theme color changes and image changes.
Now that I like how it looks, what is the proper way for rolling out this updated iOS app?

If I do it the way I previously did, there would be a version mismatch since any updates require a newer version number.

How can I edit the version number within the iOS code, or, do I even need to?

Solution referenced above:

There is no way for us to change the app version number. This is critical because we cannot submit revised apps to iTunes. You'll get a message:

This bundle is invalid. The key CFBundleShortVersionString in the Info.plist must contain a higher version than that of the previously uploaded version.

Allowing us to add custom version numbers will solve that problem.

While the solution conceptually would make sense, I'm lost as to how to get the IPA file mounted to see the contents as described.
I was able to do it with the 'iPhone Simulator' subfolder within the vBulletin package, but not the app that I'm supposed to upload.
