Memory Usage Issue, mainly caused by CMS, Config Problem?

Hi, I've moved VBulletin onto a VPS server running 1GB RAM, CentOS6.2, single core CPU.
If I monitor the memory usage using TOP in SSH. It sits around 700mb. Even if I turn off the Forum off its still around the same. Loading the server with 25 used browsing the forum it goes between 750mb and 850mb, which isn't too bad, it stays alive. However when I open a CMS page it goes up to 980mb, and then I get Error code 500. It will sort itself out after 10 seconds or so. It can become a bit annoying, however I cant pin point exactally what is causing it, even if I turn off all VB add-on except CMS.

What memory allowance does everyone else use?

I have an option of paying for burstable to 1.5Gb of RAM, or upgrading to 2Gb of RAM, but of course i want to avoid costs if I can help it.

I have APC caching installed, I did disable this but it didn't stop the Error 500.
Hoes anyone have suggestions? I can post what ever PhpInfo results you need to help track this down.

Thanks

Dan.

The URL is:- http://www.solent-renegades.co.uk
The forum version is 4.2.0. PL3
Server Type Linux
Web Server Apache (cgi-fcgi)
PHP 5.3.3
PHP Max Post Size 8.00 MB
PHP Maximum Upload Size 128.00 MB
PHP Memory Limit None
MySQL Version 5.1.67
MySQL Packet Size 1.00 MB

Although the PHP Memory limit in Admin CP says No limit if I take a look at PHPInfo under Core its
memory_limit 128M 128M

This is the memory usage after viewing many CMS pages and blogs, its crept up to over 940Mb, and I get an Error 500 on the pages. After around 10 seconds of waiting I see a few php-cgi <defunct> appear. Bringing the momory usage back down again. its like a process is keeping some RAM until it times out, is that how it works?

When nothing happens on the forum its about 700Mb in use.

So I guess the question is, I have 1GB of RAM, looks like 700Mb is taken up by the OS and other resources. Is the remaining 300Mb enough to run VBulletin, if so, what can I do to stop the error 500's? Or is something configured wrong for it
