How are pages that aren't linked from the front-end being found by google?

I have a section of my website that I'm still developing, which has no links to it what-so-ever - and I just noticed that it's showing up on google results.

Is there something going on behind the scenes, like an automated site-map being generated in a header or something?

The only other thing I can think of is Google finding it via Google Analytics grabbing the page info when I view it.

Yes if links are in your sitemap file sure search bots will archive them,
Google and search bots viewing your website as a guest aka user group ( Unregistered / Not Logged In ) You can block this group to view those forums.
