You will need to post a link to your site. vB is running vB4 and you are running vB3 AND your style is customized. The only way for us to figure out how you would change the category color would be if you post a link to your page.

So you want to make it so all the items that are currently listed as sub-forums are now each a separate line with a last post and all like here? Try changing things in AdminCP > Settings > Options > forum listing display options > depth of forums - increase that by 1 and then for Depth of Sub-Forums, set that to 0 to not show that listing of sub-forums.

See my forums are not involved in bar styles of images sent to the forum as above.

World Forums in the first image is a Category. Firmwares is a forum. This is set in Forum Manager > edit forum > Act as Forum - set to No to be a Category and Yes to be a Forum. I would suggest trying this out on your test site first.
If you need to leave the forums as forums instead of changing them to categories, then you are going to have to edit your template quite a bit. Right now the forum name and all the sub-forums are in a single column, so you can't color the background of the column. And, it isn't in it's own div, so you can't color the background of the div. So, you'll have to modify it to probably put it in it's own row and the sub-forums in a separate row so that you may color the background for just the forum row.

I believe so, yes. You have a customized template, so I can't be positive, but looking at the page source makes me think you will need to modify your template.

I don't know if it's a mod. You can look over on vbulletin.org and see if you can find it.
I would strongly suggest keeping a copy of all mods you install. You never know when you may need a copy of one of them and it suddenly isn't available because it's in the graveyard or similar.
