I would like the Category cell to have different colors for different categories. How and where can this be done?

this would require hacking. You'd need to add a routine that generates the different colors, before the category template is called. I believe this is somewhere in index.php
You could try to copy the routine that is used to generate the colors for a thread (in showthread.php)
