How do I create an image for the category strip?

Use html to add the image behind the category. Do you need help with the html, or the template you would modify?

More importantly, how do I determine the image size to put in the category strip?

What I have done in the past is take a screen capture, and crop the image down to the category. That will be very precise.

and that seems to work fine for different resolutions? i.e. 1600x1200, 1024x768 etc.

You are measuring pixels, not inches. Since an image is a set pixels no matter what resolution, yes it works.
