Hi Guys - my site is getting to the point where I need to go dedicated.
I'm currently getting 25 million dynamic hits a month, usually have over 100 users online - the record being 250. The forums have around one million posts, with about 2000 per day. I'm currently using 30GB/month bandwidth, although this is with many features turned off.
I am on a tight budget. Will I be ok will 512mb of RAM? I'm looking at a Celeron 2.3GHz.
Also, I currently use CPanel, but this is about $30 a month on the dedicated server. Plesk PSA 5.0 is free - is this any good?
As I said, I'm on a tight budget.

1). CPanel servers should have a minimum of 256MB RAM, 512MB RAM would be just fine and is above reccomendations.
2). Plesk is ok, though I am sure you will find CPanel not only easier to use, but easier to administrate your website with. CPanel has a great deal more features as well. Lastly, the $30 fee is less than most are charging, most CPanel licenses go for $50-$65/month.

Mike - you're going to have to work the budget out some - go for a P4 with 1 Gig of RAM, nothing less. You've got a pretty large DB with those 1 million posts - you'll need the RAM.

I would really consider going with RackShack, if you have a general idea on how to admin a server. They have some very nice Celeron 1.7 servers. And for the time being, I would order one with 512MB memory, and if you need more, just upgrade the Ram later. Also, either get Cpanel or Ensim Pro 250... Plesk isn't worth the trouble.

Pleask is ok, in essence, though if you are looking to do a great deal then it is pretty limited. I personally do not like plesk but many people do, as odd as it may seem :).
As for dedicated servers, while they may be a bit out of your price range, www.PriorityColo.com (http://www.PriorityColo.com) has some awesome servers, outstanding support, and quality hardware. I have been dealing with Myles for over a year now and he has NEVER done me wrong, even when I pulled him out of bed in the middle of the night a few times!

even when I pulled him out of bed in the middle of the night a few times!That sounds familiar. I've been pulled out of bed a few times these last few weeks. I usually leave my speakers on, so I am notified loud and clear when someone signs on for support.
Damn UK people don't know how to work around my MT sleeping hours :p

I reccomend www.rackshack.net they have one of the worlds top data cantre's. They are much better than Ventures Online in my opinion.
