The emails that vbulletin sends out...

This has me totally confused.

I didn't have to set up anything at all in regards to SMTP servers, and yet it still sends things out perfectly.

Does vBulletin just set up its own smtp server and send the stuff off out of there?

No...

It uses whatever your Web Host provider has setup in PHP's ini settings. Most likely something like mail, qmail or other package that is included with any Linux or Unix operating System.
