Making a script like vbstats.php

Hi! I'm sure many of you are familiar with vbstats.php, the excellent script written by mastermind. I've looked all over but still could not find tutorials on how to do that sort of thing.

I'm thinking of making a script to plot the number of people online on my forums against the time of day. How do I do that?
