how can I set it up so that my users can have different themes/styles ? I want to install different ones so no one complains about anything, giving the option to select a different theme or whatever instead of just using the default theme

Without adding a drop down menu, you can just add your new themes and when you do , just make sure you tell it to allow user to select theme. and then they can go into their user options and change it to what ever they want.

Check the forums in questions and make sure you are not forcing a particular style in them:

Admin CP -> Forums & Moderators -> Modify -> [edit] -> Style Options
