I have that in my postbit, but it's not showing up, what could be wrong?

Are you sure that the user has entered an email address?

In the postbit template it indeed should say $post[useremail] and if it is not working, then i am guessing that you altered some code regarding this query which doesn't seem to set it.
Uhm, you sure you have the code in the template postbit_useremail which sets the link & button?
Did you apply some code-hack to the forum?
Is this appearing to happen with just one user, or all users have this problem?

I'm not sure what hacks are applied. I am using a modified version of the UBB clone style template downloaded from http://www.bbaddons.com/vb/pafiledb.php?action=file&id=40
The problem is with all users.

Even when I switch back to 'default' style template still no emails...

I have checked the .style file from bbaddons and all I can see are two instances where they should be, with no typo as far as I can see, and the template useremail has the right content. Maybe you don't have the image <img src="{imagesfolder}/email.gif" in the proper folder ? maybe check what the default imagesfolder is set to in the styles > modify > images and then with your ftp if email.gif is actually there.
If so, then sorry, I wouldn't know. maybe a vb team member does :>

Indeed .. it doesn't even generate any code ..
i have checked the source of the generated page but no email.gif is mentioned. the $post[useremail] doesn't seem to be parsed at all.
Do you have this enabled in the admin control panel?

Email Options
Enable Email features? > YES
Enable email sending features: send to friend and email notification for posters and moderators. Don't forget to remove those links from the forumdisplay, newreply, newtopic, & editpost templates
You can turn off the 'Send to Friend' feature for invidual user groups in the User Permissions area.

Allow public viewing of email addresses.

Use email form? > YES
If "display email addresses" is set to yes, then how should then email address be displayed? If this is set to yes, then an online form must be filled in to send a user an email, thus hiding the destination email address. If secureemail is set to no, then the user is just given the email address.
This is what I have enabled in my ACP and the buttons show up. Maybe thaz why (though i doubt it, but doesn't hurt to check)
I think it is otherwise some function or code not working properly, maybe due to the new style applied (but then why is default vbulletin.com one's not working either) or some code-hack.
I checked the showthread.php file (if that is the correct one) and it says there twice to templatesused the post_useremail and it does parse it on the end to .showpost and eventually .showthread so i wonder why it shouldn't be ..
