I'm never really sure what to do when I get these messages. I downloaded a template to use on my forum and the only updates have been automated ones when I've added new mods.
What do these messages mean and is it likely to mess with my style if I revert, or mess with my forum if I don't?

Not sure what that is. Can you post a screenshot?

Screenshot added. It comes up on the admin cp homepage, just below where it tells you if your vB version is out of date, it says x number of templates are out of date, you click and it comes up with this screen.

is what it says on one line. You know the screen I mean? I tried uploading a larger image but only 100k is allowed.

That is a custom template. It will likely not work with 3.8 and may need to be reverted.

So what happens when I revert?

You lose all customizations.
If you are not having any problems on your forum home page then you can try leaving that alone.

Ah ok, thanks.
