hello,
how easy is it to add a few simple forums to my website using Vbulletin?
do I just download the software, create a config file, ftp the files to my hosted server, create a few msql tables, and I'm up and running?

It really depends on how quickly you can configure a database and config files. vBulletin can takes less than 10 minutes to setup (that includes uploading all required files). Setting up the forum will take a bit longer because there is a fair amount of various settings you can set to own requirements.
vBulletin uses an HTML based templating system, which is quite easy to customize as you wish. I actually use Dreamweaver to edit the templates myself, most of the time I use Notepad though, because it's lightweight.
Changing the look of vBulletin is quite straight forward, if you know CSS... you can edit the values directly from with the Admin section.
