How do I get rid of the user notes link in profiles? Thanks

That only shows to usergroups that have that permission. If you do not want to have user notes at all, then turn it off for each group:

Admin CP -> Usergroups -> Usergroup Manager -> Edit Usergroup -> User Note Permissions
