I'm going to purchase vBulletin in around a month or so, and I just had a question. If I had a SMF forum hosted on a sub domain such as... cheese.website.com is there any chance I could convert this to vBulletin but move it from the subdomain to just website.com without messing anything up?

Yes, this would be possible with vBulletin's ImpEx system. Moving it to just website.com is easy, as you would just need to move the files there.
