Should be able to be done by editing the usergroup permissions for the guests usergroup.

At this time there is no demo of the Blog. We have asked the Devs to add both the PT and Blog to the Admin demo but this is going to take some time.

There's quite a lot of permissions - both in the Blog settings and the Usergroup options. Is there something specific you want to know?

To answer your specific question about guests, if you set the any group's permission "view others" to false then they can only see their own entries. Since the "view own" permission is meaningless to guests, the "view others" permission set to no hides the blog completely from them.
