I am trying to import a phpBB forum to vBulletin 3.6.8, but Impex only gives me 3.6.7pl1 as latest version. I have 3.6.8 installed.

How can I get it to convert to 3.6.8?

Yes, just choose 3.6.7PL1. It will work.
