Is it possible to change the options available in the priority drop down?
I would like to change it to Immediate, This Week, Next Week, etc etc instead of numbers.

They are phrased, but the templates contain hardcoded values that you'd have to edit.

That's fairly simple now I look at it, but it seems the only templates I can reduce the amount of options from 10 are the search and postissue templates. Is there any way I can globally reduce the amount to say 5?

Not at this time. (I think you'd have to edit projectajax.php manually at this time.)

just another vote for this option - the ability to edit number of priority options.
Isn't the highest number usually with the "highest" priority?

Not here it isn't. Top priority is always priority 1. It's like a list where you deal with the items numbered 1 first and work to the end.

"Priority" and "Severity" would have opposite orders. We based the order on this:
