Is it easier to 'mess up' a root-level install or upgrade a vbulletin that is in the root directory?

It doesn't make any difference at all what directory you install vBulletin in.
If you have other non-vB content, or some of the portal systems, then you will want it in a directory called something like forums, but otherwise, you can just install it in the root directory.

Let's say that when I first 'launch' the site it will only have vBulletin but in the future (about 2 months from now) I would like to add CMS or portal.
Would it be best for me to install vb in another directory (under the root) at this time or is moving vb to another directory simple too?
If I do install vb in a directory other than the root at this time, what is the best way to 'redirect' visitors to the forum? For example, how to get visitors from www.rootdirectory.com to www.rootdirectory.com/forums?

You can:
a) install in another directory and redirect using a redirection method to that directory
b) install in the root and move it to another directory later
c) install in the root and install any portal there later too by renaming your forum home script and updating a setting (will depend on the portal used)
All of these are perfectly valid options, and the only thing that determines the way that you go about it is your own personal preference.
