I have a user who is complaining that it "takes her very long to get email notification of replies to posts? Sometimes it takes a couple of days!!".

I tested it myself and didn't see any problem.
Do you have any idea what might be the problem?
(I guess one answer might be that it's her email client).

I agree, either her email client, or your email deamon.

It is almost certainly a problem on her side (either client or server) seeing as it works fine for you and others.
